- For Filling
- 1/2 cup paneer grated
- 1/2 cup spinach chopped
- 1/4 cup green capsicum chopped
- 1/4 cup red capsicum chopped
- 1 large carrot chopped
- 1/2 tsp dried oregano
- 1/2 tsp chilli flakes
- 1/2 tsp dried parsley
- 1/2 tsp dried basil
- 1 medium size onion chopped
- 1 tsp garlic chopped
- 1/4 cup milk
- 1/4 cup grated cheese
- to taste Salt
- 2 tsp butter
- For Beetroot Crepe
- 1 cup Beetroot puree
- 1 Tbsp rice powder
- 1 cup whole wheat flour
- 1/2 cup Besan/ gram flour
- 1/4 cup sooji
- 1 cup buttermilk
- to taste Salt
- as needed Butter to grease the pan
- 1 cup Water to make the batter
Steps to make to make Beetroot Crepe
- For filling - in a pan heat butter and add chopped onion and garlic and fry till translucent. Add chopped spinach, chopped carrots, chopped capsicums, 1/4 cup milk and cook for 5 mins. Add grated paneer and cook well.


- Add dried oregano, basil, parsley, chilli flakes and salt. Stir well. Add grated cheese and stir once. The filling is done

- For Beetroot crepe - Mix all the fry ingredients and the wet ingredients together. Add salt and mix well. Set aside for 15 mins


- In a pan grease with butter and take 1 ladle of the batter, spread like a Dosa and cook 1.5 mins on each side, set aside when done

- Add the filling and fold
- Plate and enjoy
